  • 2 sticks of lemon grass
  • 1 green bell pepper (chopped)
  • 1 red bell pepper (chopped)
  • 1 medium-sized onion (chopped)
  • 1 tomato(chopped)
  • galangal or fresh ginger root
  • 1 red Thai chili
  • 6 leaves of kaffir lime leaves
  • 400 ml of baby corn
  • 150 g of mushrooms
  • 5 tablespoons of soy sauce
  • 2 tablespoons of sugar
  • 2 tablespoons tamarind paste
  • lime juice

Cooking Method

  1. Take a large stock pot and add 2 tablespoons of coconut oil.
  2. Add a quarter cup of red Thai curry paste. Cook it over a medium flame for 4-5 minutes.
  3. Add half a cup of coconut milk and stir it.
  4. Add 3 liters of water over it with lemongrass, galangal, lime leaves, and chili peppers, and stir it.
  5. Cover the pot and bring it to a boil for 10 to 15 minutes.
  6. After boiling, it's up to you to keep the solid ingredients in or take them out.
  7. Now add green and red bell peppers, red onion, tomatoes, baby corn, mushrooms, soy sauce, tamarind paste, sugar, and the last squeeze of lime.
  8. Turn the heat from medium to high and give it a stir.
  9. When the soup comes to a boil, it's ready to serve.
