- 4 cups shredded chicken (cooked)
- Half a pound of mushrooms (thinly sliced)
- 6 tablespoons of butter
- 3 large garlic cloves
- 1/3 cup all-purpose flour
- Half a cup of cream
- 1 cup of peas
- 1 teaspoon of salt
- one-fourth teaspoon of black pepper
- fresh parsley
- 2 cups of chicken broth
- 2 unbaked pie crusts
Preparing Vegetables
Now we will prepare our vegetables step by step.
- Take mushrooms. Cut them in half and then thinly slice them.
- Chop one medium-sized onion.
- Chop and thinly slice two medium carrots. You should have about 1 cup of carrots.
- Mince 3 large garlic cloves.
- Finally, chop the fresh parsley.
Now all your ingredients are prepped and ready to go.
Making Chicken Pot Pie Method
It's time to fire up the flame. Place a large pot over medium-high heat and add butter.
Step 2
Once your butter is melted, add chopped onion and carrot to it. Sauté that together for about 8 minutes. Stir it until the veggies become soft.

Now stir in your sliced mushrooms and minced garlic and sauté them for 5 minutes until the mushrooms are soft.

Sprinkle all-purpose flour over it and stir for 2 minutes. You are basically making a roux, which will thicken up the sauce.

Add 2 cups of chicken broth and half a cup of heavy cream. And bring your mixture to a simmer for a minute.

After you get a thick gravy consistency, add salt and black pepper to it.

Now add your shredded chicken along with frozen peas and finely chopped parsley. Stir them together until well combined.
Then turn off your heat and let it cool.

Arrange your unbaked pie crusts evenly and pour your chicken pot pie filling over the pie pan. Spread the filling evenly. Now add the second unbaked pie crust over it.

Now bake the pie in a preheated oven for about 30–35 minutes until the top crust is golden brown. Once the pie is out of the oven, let it rest for about 15 minutes.
Lastly, garnish with a little bit of parsley.
